So if you’re a vegetarian you’ll have lots to choose from. There are plenty of other vegetarian options including 2 items (of 3) on their “Mexican Street Corn” menu, a vegan burrito, the regular “giant” burrito with cheese an tofu), a quesadilla bar, 3 different salads, and a quinoa power bowl. If we had the chance to come back we might consider getting the guacamole flight which allows you to try all 4…though as vegetarians we really only would want three. We got the “classic” which also had a bit of kick to it…and there are 3 other guacamoles available (the 2 other vegetarian ones were tropical with mango and dragon fruit init, and sweet potato). The mango salsa was sweet and okay…A basic tomato salsa which was mild, and a green tomatillo which tasted the best as far a we were concerned – nicely tangy with a little kick to it. We also got chips and three salsas for the table. (I’ve had a lot of refried beans) The rice was also vegetarian (double woohoo) and was good. The refried beans were vegetarian (woohoo!) and among the best tasting I’ve had. The “Kale & Sweet Potato” was sweet and gave a nice counter taste to the two savory ones. The “Exotic Shroom” was super hearty and savory…lots of flavor with roasted corn and cotija cheese on it too. I liked it but the pickled cucumber slices were a bit too spicy for my tastes. The Crispy Tofu taco came with a coated and fried tofu which was almost falafel like. I got the “taco platter” option which means I got to pick 3 tacos (I got one of each of the vegetarian ones) along with rice and beans. I’m a vegetarian so was excited that there were three different vegetarian tacos to choose from. Step 4: Use a marker to draw the seeds onto your red paper tomatoes. Make sure some of the brown paper is still visible. Step 3: Glue the green lettuce paper on top of the meat. Step 2: Glue the brown ground beef paper onto the taco shell. The two we had were the Herradura (a reposado) which had a big flavored profile and was a tiny bit Smokey like a mezcal, and also the Espolon (also a reposado) which had a creamy caramel start and which was smoother than Herradura. Step 1: Fold the yellow oval in half to make a paper taco shell. We, of course, would have preferred to have been in on that decision and they were nice enough to bring us a different one when all was said and done. Though it turned out they were out of one of the tequilas we had asked for and the bartender made a substitution without asking us. Our server was generally knowledgeable about the tequilas and made good recommendations based on our preferences.
